Regarding accomodation, I can only recommend one hotel first hand but they are closed in December so try looking up hotels in Fira via Booking.com - I'm by no means an expert when it comes to Santorini (only been once) but Fira is the island's capital so chances are you will find more hotels and restaurants there which are open in December.
